Fluctuations in temperature or humidity accelerate the process, with warmer temperatures hastening the aging process. Unregulated wine cellar temperature fluctuations will prematurely age your wine. Humidity also affects the quality of your wine. Ideal conditions are between 55-75% humidity; much higher than that and mold will form, rotting your labels. Lower humidity draws the wine out of the bottle, allowing in the oxygen that hastens the aging of your wine.
